Spring brings White Asparagus Season into households and restaurants all around Western Europe. Because of its delicate flavor and nutritional value, it has expanded tremendously in the last 15 years worldwide.
Unlike the green asparagus, which is available all year round at supermarkets, the White Asparagus has a very short season from the beginning of April till June 24! The difference between green and white asparagus is that the green asparagus grows on top of the soil and the white asparagus grows underneath the soil because of the chlorophyll system and the delicate harvesting early in the morning it stays white.
White asparagus spears look just like colorless green asparagus, just more delicate, and have a milder, sweeter flavor with just a hint of bitterness! It's considered that the bigger the stalks, the more flavorful and more expensive they will be.
Small white asparagus is considered and called white grass because no matter how big the white asparagus will be, each of the stalks has to be carefully peeled, the skin will be very tough and not enjoyable! German White Asparagus has a long history it goes back to the 1540s.
It's called the white gold or the Royal Vegetable of the Spring! It's preferred more than green because of the tenderness, less bitterness, and delicate sweet finish. It became so popular in Germany, some villages take the tradition even further and crown an Asparagus Queen.
The position is taken very seriously for the eight weeks of royal life and is expected to promote and spend every free minute working in service of White Asparagus evangelism! The most traditional way to eat it is to peel it properly, steam it for 15 minutes in 90 degrees light salted water with one cube of butter and a squeeze of lemon juice.
The classic way is to be served warm with sauce hollandaise, Black Forest or cooked Ham. In the past, I peeled and served thousands of kg/lbs of White Asparagus through my last two restaurants in Germany and Houston TX.
